Viognier, Roussanne & Marsanne
It was made with the Roussanne fermented in terra cotta amphora for 67 days -skins & all!! This ‘amber wine’ is something out of the ordinary. The Viognier gives fruit & perfume while the Marsanne lends its waxy texture & the Roussanne gives a hint of savouriness. This wine is bottled un-fined & unfiltered, so a little bit of sediment is both likely & intentional. (Kinda like a Coopers Ale!!)
